What is Chicken Cordon Bleu
Chicken cordon bleu is a dish with butterflied chicken breast, swiss cheese, and slices of ham all rolled up together then breaded.
What to Serve with Chicken Cordon Bleu
There are many different options when trying to decide what to serve with chicken cordon bleu. Here are some of our favorites.
- A fresh green salad
- steamed broccoli
- green beans
- mashed potatoes
Leftovers
If you have leftover chicken cordon bleu, you can reheat them in the air fryer.
Preheat your air fryer on the lowest setting 250-300°F. Add the chicken cordon bleu to the air fryer basket and cook at that lowest temperature for about 15 minutes. Check it and add more time if needed.
How to Tell Doneness
How long your chicken cordon bleu needs to cook may vary. I found any chicken cordon bleu that I didn't pound thin enough or if it was a larger slice of chicken needed a bit more time.
If you want to check to see if it's done, you can use a meat thermometer.
If you don't have a meat thermometer, you can also slice your chicken cordon bleu to check the chicken for doneness.
Just cut it in half - if any of the chicken is slightly pink or not totally white, cook for longer. When the additional time is done, cut into the chicken cordon bleu again at the thickest spot - or furthest from any edge to check for doneness.
You want to cut into it again at a thick spot to check for doneness as the last spot you cut into will cook faster after being cut into.
How to Pound Chicken Without a Mallet?
If you don't have a meat mallet, you can do what I do and use a rolling pin to pound your chicken. The rolling pin works really well.
Ingredients
- large chicken breasts
- salt
- black pepper
- paprika
- deli ham slices
- swiss cheese
- Dijon mustard
- sour cream
- minced garlic
- all-purpose flour
- cornstarch
- garlic powder
- onion powder
- large eggs
- panko crumbs
How to Make
Step 1: Butterfly the chicken breasts by slicing the chicken breasts in half open the chicken flat. Cover the chicken with plastic wrap and using a kitchen mallet or rolling pin, beat the chicken flat to about ¼ inch thick.
Step 2: Cut the Swiss cheese slices in half. Place one slice of ham on the open chicken breast and then 3 half slices of cheese. Repeat with the other chicken breast.
Step 3: Roll the chicken breast closed around the ham and cheese, then use toothpicks to pin it closed with toothpicks. Set in fridge to chill while you continue.
Step 4: Whisk the eggs in a shallow bowl.
Step 5: In another bowl, fill with the panko crumbs.
Step 6: In a final bowl add the spices, flour and cornstarch and mix well.
Step 7: Preheat the air fryer at 370°F for 3 minutes while doing the next step.
Step 7: Dredge the chicken breast in the flour mixture first, then the egg wash and lastly the panko crumbs.
Step 8: Make sure the chicken is fully breaded and place in air fryer basket. I found it easiest to stick the chicken breast on it's side so the toothpick was horizontal. This made it so it was easier to flip the breast. Spray the chicken breast with oil.
Step 9: Cook at 370°F for 9 minutes, flip and cook for 9 more minutes. Make sure to check the chicken for doneness. I found if I didn't pound my chicken breast thin enough or was using larger chicken breasts it took more time to fully cook.
Step 10: While cooking, mix together the Dijon, sour cream and minced garlic for the Dijon aioli.
Step 11: Garnish with parsley and serve. You can drizzle the Dijon aioli sauce over the top or add some to your plate and dip the chicken cordon bleu into it.
Enjoy!
